Leftover Christmas Ham Recipes

Makes: 8 meatballs
Prep Time: 10 minutes
Cook Time: 10 minutes
Meatball Ingredients: 500g Scottsdale Pork Tasmanian Pork Mince
2 garlic cloves, peeled and finely minced
The zest from 1 lemon
1 tablespoon fresh dill, finely chopped
1 tablespoon fresh parsley, finely chopped
1 tablespoon dijon mustard
½ cup breadcrumbs
1 egg
Sea salt and cracked black pepper
To Serve:
Store-bought tzatziki dip
Flatbreads or pita breads
Lemon wedges
Extra herbs - parsley & dill
Method:
1. Preheat a BBQ to a high temperature.
2. In a large bowl, combine the meatball ingredients and season well with salt and pepper.
3. Use clean hands to gently mix until just combined (don’t overmix or they’ll be tough).
4. Roll into 8 equal size shaped balls and add to skewers if you wish.
5. Cook the meatballs on the BBQ tray or grill plate for 5 minutes each side.
6. Serve with dip, flatbreads, extra lemon and fresh herbs
