Sticky Asian Style BBQ Pork Ribs

Serves: 2-4

Cook Time: 45 mins

Dry Rub Ingredients: 
1 rack Scottsdale Pork American Style Pork Ribs 
2 tablespoons brown or coconut sugar 
1 tablespoon smoked paprika 
2 teaspoons minced garlic 
1 teaspoons grated fresh ginger 
1 teaspoon Chinese five spice 
Sea salt and cracked black pepper

Sticky Asian Style Glaze Ingredients: 
2 tablespoons sesame oil 
3 tablespoons soy sauce 
1 tablespoon rice vinegar 
2 tablespoons brown or coconut sugar 
1 tablespoon maple syrup

To Serve: 
Sea salt and cracked black pepper 
Chilli flakes 
 

Method 
1. Preheat your BBQ to medium-high heat, with the lid down. 
2. Pat the ribs dry with a paper towel and rub all over with the dry base mix. Let them sit whilst the BBQ heats up. 
3. Wrap the ribs tightly in foil and place them on the BBQ over an indirect heat (or on the upper rack if your BBQ has one). Close the lid and cook for 25-30 mins. 
4. While the ribs are cooking, whisk all glaze ingredients in a small saucepan. 
5. Bring to a simmer for 2-3 minutes on the stovetop or side burner until slightly thickened. Set aside. 
6. Carefully remove the ribs from the foil and place them directly on the grill. Brush the ribs generously with the glaze. 
7. Grill for 5-10 minutes, flipping once and glazing again, until caramelised and sticky. 
8. Rest the ribs for 5 mins, slice between the bones, and sprinkle with sea salt, cracked black pepper and chilli flakes.
