Serves: 2-4 people

Cook Time: 8-10 minutes
Pork Steak Ingredients:
● 400-700g Scottsdale Pork Tasmanian Scotch Steaks
● 1 tablespoon olive oil (for brushing)
● Sea salt and freshly cracked black pepper
Zesty Lime Herb Sauce Ingredients:
● ½ cup fresh parsley, finely chopped
● ½ cup fresh coriander, finely chopped
● 1 shallot, peeled and diced finely
● 1 garlic clove, peeled and minced
● The zest of 1 lime
● 1 lime, juiced
● ½ cup olive oil
● Pinch of sea salt and freshly cracked black pepper
Method:
In a bowl, combine the dressing ingredients. Set aside.
Pat the pork steaks dry with a paper towel and brush with olive oil.
Heat a large grill pan over medium-high heat until hot.
Place pork fillets in the pan and sear for 4-5 minutes either side.
Transfer the pork to a plate or board to rest for 5 minutes before slicing. Serve with a generous drizzling of the zesty dressing
