2 pork sausages, cut into thick rounds
2 tablespoons butter
4 tablespoons extra virgin olive oil
1 large potato, boiled with skin on (leftovers work great)
4 shiitake mushrooms, halved
3 eggs
2 spring onion, roughly chopped
6 cloves garlic, roughly chopped
½ brown onion, thickly sliced
1 bunch parsley, roughly chopped
Salt & pepper
Dice the cooked potato and add to a hot frying pan over medium-high heat with 2 tablespoons of olive oil. Add mushrooms and turn the potatoes over. Add onion, sausages, salt, pepper and garlic
Add remaining 2 tbsp of oil and 1 tbsp butter into another frying pan over a medium heat. Crack the eggs into the pan and season with salt and pepper. Fry the eggs to your liking
Add another tablespoon of butter with the parsley and spring onion to the potatoes. Spoon out onto a plate and top with the fried eggs
