Glazed Christmas Ham

Cook up the perfect Christmas Ham.

Glaze

  • 1 x brown onion, diced
  • 150g fresh ginger sliced
  • 2 x cloves of garlic
  • 6 x star anise
  • 250g brown sugar
  • 375ml cola

1 x Scottsdale Pork Ham on the bone

Method:

  1. Preheat over 140 degrees Celsius
  2. Add onion, ginger, star anise, brown sugar and cola to a pot, stir together put on low heat simmer for 10 minutes, stirring occasionally.
  3. Carefully peel skin off the ham, leaving the layer of fat underneath.
  4. Score the fat approximately 1cm in a diamond pattern all over the ham to allow the glaze to penetrate.
  5. Place ham in baking dish and generously brush glaze over the ham
  6. Bake for 30-40 minutes until the glaze has caramelised. Pull the ham out of the oven every 10 minutes to brush-on another coating of the glaze.
